Served alongside a jeweled tabbouleh built on a base of fine bulgur tossed with roasted beets (sliced thin, their earthy sweetness concentrated in the oven), pomegranate arils, and a pomegranate-molasses vinaigrette spiked with sumac and toasted cumin.
